Apple Cinnamon Oatmeal Muffins

I have always wanted to like bran muffins. Actually, when they’re made well, I really do, but there’s nothing like a dry, tasteless, cardboard-infused bran muffin to quash the desire to ever enter the bran muffin realm again. The idea is great-a healthy, low-fat alternative to the standard cupcake-like muffin-just as long as you can skip the cardboard. I have played around with a variety of bran muffin recipes until finally finding a flavor and consistency I love: the taste of of apple-cinnamon oatmeal with the convenience and crumb of a muffin.

These are delicious and hearty muffins that make for a satisfying grab-n-go breakfast or mid-morning snack. I like to prepare these the night before so they’re ready to go in the morning. Studded with raisins and apples and topped with a sweet oatmeal streusel, these are every bit as tasty as they are healthy.

Apple Cinnamon Oatmeal Muffins

  • 2 cups whole wheat flour
  • 1 cup oat bran
  • 1 cup wheat bran
  • 1 1/2 cups brown sugar or honey
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 cups applesauce
  • 2 eggs
  • 1/4 cup cream cheese, softened
  • 1 tsp vanilla
  • 1 cup raisins
  • 2 medium apples, peeled, cored, and chopped

Oatmeal Streusel

  • 1/2 cup rolled oats
  • 2 Tbs flour
  • 2 Tbs butter, melted
  • 2 Tbs brown sugar

Make the streusal by stirring the oats, flour, sugar and melted butter together until combined.

For the muffins:

Preheat oven to 350°F. In a large mixing bowl, combine dry ingredients and make a well in the center. Add in applesauce, eggs, cream cheese, and vanilla, and stir to combine. Mix in the raisins and apples. Grease two 24-count muffin tins (or line with paper liners), and spoon the batter into the tins until batter is just below the top. Sprinkle with oatmeal streusel. Bake for 25-30 minutes, or until a toothpick inserted near the center of muffins comes out clean. Cool on a wire rack. Serve warm or at room temperature. (If using paper liners, the muffins will come out of the liner more easily after they have cooled completely.)

Makes 24 muffins.
