I have always wanted to like bran muffins. Actually, when they’re made well, I really do, but there’s nothing like a dry, tasteless, cardboard-infused bran muffin to quash the desire to ever enter the bran muffin realm again. The idea is great-a healthy, low-fat alternative to the standard cupcake-like muffin-just as long as you can skip the cardboard. Of all the crazy things not to like as a kid, why did I pick rice? Rice is one of those light but filling foods that seems to complement anything. And yet, somehow it ended up in the same category with hot dogs and mushy peas. Luckily, tastes matured and now I can down rice with the best of them. Especially when the rice is in the form of pudding. Creamy. Sweet. Flavorful. It’s no surprise that some form of rice pudding can be found in almost every culture worldwide. There’s something about a warm, fragrant bowlful that seems to suggest that while there is rice pudding, all’s right with the world. It’s hard to think of many meals that whisper “comfort food” better than chicken. Especially when broth-soaked noodles are involved as well. This soul-soothing, noodle-slurping, lip-smacking feast is an adaptation of a traditional Amish dish that involves slow cooking a whole chicken, mixing with noodles that have been cooked in the broth, and serving over potatoes. I add some seasonings and peas into the mix, and serve alongside buttery-smooth new potatoes. It’s warm, chicken-drenched therapy on a plate.

“Ruta-what?” That’s what the cashier said after I told her what that humble-looking round root was called. If you haven’t tried rutabaga, you are really missing out. It shines in this skillet pot pie, packed with root vegetables and drenched in gravy, topped with a crispy cornmeal crust.. Plus, it’s just plain fun to say. It’s also likely that your local grocer carries rutabaga…and you waltzed right past it without ever noticing before. Who would have thought that eating a vegetable could be considered a guilty pleasure? Well, when it comes to decadent carrot cake lathered in cream cheese frosting, no vegetable oozes sweet seduction like this one. And yet, I still try and convince myself that what I’m eating is really healthy. It is still a vegetable after all…and don’t forget about the nuts and fruit!
